warm and spicy soup for cold days.

There is quite some beauty in being outside for a walk  and then getting back into a cozy home, making some fire in the fire place and eating a good warm soup. We love soups throughout the cold days.

...this is a quite easy recipe we absolutely looove over here:

Carotte-Curry-Nut-Soup: 
 (you can also use pumpkin instead of carottes,yummie!)


400 g carrot (s), peeled and sliced
20 g ginger, fresh, finely chopped, 5 tablespoons of ground hazelnuts
50 g butter
1 tablespoon sugar
¾ liter of vegetable stock
150 ml coconut milk, unsweetened
   curry powder, salt, Pepper

Sauté carrots and ginger and hazelnuts in butter. Sprinkle with sugar and caramelize slightly. Deglaze with the stock and simmer over medium heat. Season with salt and pepper.Puree and possibly pass through a sieve. Heat the coconut milk and continue to stir it foamy with the use of a hand blender. Mix it together.
 Fill the soup in  bowls and garnish it with extra coconut foam, some hazelnut powder... (I also put some fresh sclices of pear in)...
Like soups in general the soup tastes as better when it had some time to steep...
