Schnelle Elisenlebkuchen aus Butterhörnchen/Milchbrötchen- Fast Elisen-Gingerbread made from Brioche

Just short stopping by to share one of our favorite christmas cookie recipes
Favorite because it so fast and easy and it tastes just perfect like ornate Elisenlebkuchen.
I think the actual recipe is from former times where they simply couldn`t throw food
away, so they created a Lebkuchen recipe made out of old buns. This works out
today just as perfect and  by the way also the idea to not throw away so much leftovers.
It comes out simply without any extra flour, basically just some brioche buns, eggs, nuts,
dried fruits and spices... but see for yourself :

Here it goes  :

recipe for ca. 45 Lebkuchen

10Milchbrötchen /brioche buns
400 ml Wasser/ water
300 g Zucker/ sugar, 100g Honig/honey
  4 große Ei(er)/big eggs
1 Pck. Lebkuchengewürz/ Gingerbread  spice mixture (15g)
1 Pck. Backpulver/ baking powder (15g)
120 g Aprikose(n), getrocknete/dried apricots
120 g Datteln/ dates
350 g Mandel(n) und/oder Haselnüsse, gemahlen/ ground almonds and or hazelnuts
120 g Mandel(n), gehackte/ chopped almonds
45  Oblaten/ oblates
Puderzucker; Kuvertüre/ powdered sugar , dark chocolate
1/2 TL Rumaroma, (half a teaspoon) rum extracts

First crumble the brioche buns and let them soak in water. Next finely chop the dried fruits.
Now batter the eggs together with the sugar and add the spices, aroma, honey, drie fruits,
nuts and soaked buns and put the well stirred dough on the oblates. Bake them with
180°C/356℉ for twenty minutes. Afterwards glaze the still warm Lebkuchen with
a thin sugar coating, or with a chocolate coat after they cooled down.

you can preserve them in a tin, maybe with a slice of apple for staying soft and succullent,
they are actually quite durable.
That`s basically all, we are going to bake them several times all over, because they are not
that durable in our household;)...

have a happy advent time, everyone, bye for now!

rhubarb jam ( low fructose jam recipe) and vegan rhubarb cheesecake. Rhababer Marmelade und veganer Rahababer Käsekuchen.

( Deutsche Übersetzung folgt in Kürze)

almost a year now has passed, after I found out, that I`m sensitive to lactose and fructose.
It was such a relief, after struggling with gastritis and stomache problems for 4 months.

But then I had to learn so many things all over from the beginning. I kind of needed to
somehow learn my whole cooking new and was first of all quite overwhelmed.
After a few months now, I can totally say, that all of this changed my eating habits for
the better and I feel so good now!
I learned a lot about problems that normal sugar and too much fructose can cause
and also found out that  my migranes got better when I started avoiding milk.

Of course they are some things I just can`t do without, like cheese
(almost all longer aged ones are lactose free!) and I needed a new recipe for jam
making and also not to forget for cheesecake!

So here it is, maybe you are also at this point like me, searching for some new fructose
and lactose friendly recipe basics.

Here is my go to low fructose jam- recipe at the moment, which you
can make with all different kind of low fructose fruits,

because what is spring and summer without jam making ?

There is not much to it:

get some low fructose fruit you like (berries, grapefruit, rhubarb, ...),
simmer it together with a low fructose sweetener, I mostly use brown rice syrup,
glucos works well too (also Spelt syrup, Quinoa syrup, erythritol).

Then add the base for the right jam consistency:

-if you want to keep it vegan you can use agar agar
- if you don`t mind you can use gelatin

in the right amount written on the leaflet according to the product you use
and your fruit weight.

That´s simply all !

Rhubarb Rosemary Jam  :

1 kg Rhubarb ,  1- 2 twiggs rosemary,
1 vanilla pod, I took brown rice syrup to sweeten in the amount I like it to taste and some agar agar
( right amount see leaflet note)

and because I think rhubarb and cheesecake make a pretty good couple I also tried a
vegan, lactosefree new cheesecakevegan, lactosefree recipe together with the jam :

In Germany we like our cheesecake rich and baked and I think this recipe
comes quite close to the original.
In my case I took half of the recipe, used normal soy joghurt and put all into small glasses
adding bits of rhubarb and rhubarb jam.

250 g soy yogurt "lime balm"
     sweetened again with
Juice of a rather large lime
     15 g custard powder
     Mark 1/2 vanilla pod
     30 g Alsan
margarine melted,
     15 g coconut fat melted,

It was delicious and I´m really looking forward trying out many new recipes of this kind !

Stollen-Konfekt.( a traditional German recipe)

Have you ever deleted a post accidental...?
so I started the year off with doing this ... jipieh.

so let´s try to repost it (from Dec 2014) ...:

don`t know about you but I love to read
blogs from allover the world with its
traditional recipes, traditions and more...
this somehow feels a bit like travelling,
without actually doing that in person....

So for this time I would like to invite you into
my homeland, the "Erzgebirge", a mountainous area
in the eastern part of Germany, known for it´s various
Christmas traditions, such as being the home of the nutcracker
and Christmas Sweets like "Stollen".

So if you never really tasted this sweet Christmas bread,
you definitely should...

and actually now you can bake your own:):

So this is my quite simple mini version as so called "Konfekt"
or Stollen "snowballs", like my girl calls them :)

Stollenkonfekt with Apricot and Cranberries:

Ingredients:

100 g butter
75 g sugar
150 g Quark
300 g flour
1 tsp cinnamon
1/2 pck. Baking powder
50 g almond (s), chopped
75g sliced dried apricots, 75g cranberries
  some orange (n) - shell

125 g powdered sugar
100 g butter

Mix the flour with baking powder and spices, set aside.
Stir the butter with the sugar until foamy, stir in the quark and the orange peel.
Add the flour mixture, stir briefly, then complement with almonds, apricots and berries
knead until you have a smooth, pliable, but not sticky dough.

  Heat oven to 180 ° C .

Take walnut-sized portions and form small bowls.
Place on a prepared sheet and bake in about 10-15 minutes,
until the surface is golden brown.
I

in the meantime, sieve the powdered sugar on a plate
and melt the butter in a small saucepan.
Cover the still warm mini stollen in butter and then roll in powdered sugar,
thats the most important process, my granny does this at least 3 times
to get the typical butter sugary Stollen coat,
( 3 times is optional;)
we also sprinkled them with some edible glitter
(also optional, but for us duty;)

Store in a tightly closed jar, let it rest at least a day!

Makes about 40 pieces.

ENJOY!

baking bread again .(add some more cheese also).

guess what, right ... i can`t stop...
- baking bread
so I also don`t stop sharing the results...
because this is pretty much fun !

actually it`s not even a big deal,
because i`m still varying my go to recipe,
and it does not get boring.

so if you like stay a while and join me...

remember this bread recipe, so easy, no!?

in these pictures I varied it (again) and made:

Fresh cress, emmentale cheese buns:

used rye flour and as the name says, added fresh cress and
some sliced emmentale cheese cubes...,
use the original amount of dough to form 12 buns,

( baked in the preheated oven, 200°C at 20 minutes)

so good! especially when the buns are still warm and cheesy ...

and there is another one,
which really is really one of our families favorites.

Mont D`or Cheese baked bread:

again I used half of the original seize of my go to recipe,
with whole wheat flour and one third less yeast (to get it real crusty),
prepared the dough as always, rolled it in a round circle,
3 fingers thicker then the radius of the Mont D`or Cheese,
added some bits of slices of garlic into the edge crust,
closed it all around the cheese,
digged a small whole into the midst of the Mont D`or

and proceeded like normally by adding some white vine and garlic inside the
midst of the cheese,
after that placed it in the preheated oven, ca. 180 °C- 30 minutes...
(until there is a nice bread crust and the cheese inside is melted)

and le voilà- you will love it !
( and you may never stop baking bread...)

more bread (peanut butter, plum bread, low carb).

as I told you  I can`t stop trying out new bread recipes this season.
there is nothing like the fragrance of fresh baked bread on cold evenings
around the house.

So there is a new recipe I came across pinterest.
It instantly got my attention because it`s without flour.
Since I had Gestational diabetes and gained kilos by
just looking at food I slightly changed some of my eating habits
since then (not all:)...

So here it goes...
my own version of the low carb peanut butter bread with dried plums:

You`ll need: 1 cup peanut butter, 3 eggs, 1 Tablespoon vinegar,
2 small teaspoons baking soda (Changed the original recipe that the bread goes up a bit better),
1/4 teaspoon salt, some sliced dried plums

melt the peanut butter, stir everything together and bake at 350 degrees for around 40 minutes.

We love it, it´s slightly sweet and nutty, perfect with some dried fruits like plums,
we like it a lot just with smooth butter, but it´s also good with cheese and jam.

It´s definitely worth a try (and if you do, let me know what you think),

Have fun!

easy bread recipe (optional: filled with goat cheese, figs, arugula)

don`t know about you but the colder it gets the more we grave warm
and homey things around here,
so currently I´m trying a bunch of new tea sorts, soup recipes
and not to forget: baking different kind of breads...
there is nothing like the scent of fresh baked bread and eating it with
still warm with smooth butter, don`t you think ?

so I thought to share one of my "go to" recipes for bread,
that´s simple, fast and can be easily be varied in all kind of directions ...

You need:

500g spelled flour ( you can vary it with all kind of flours),
300ml water, half cube of yeast, half tbsp honey, half tbsp salt

use the honey to dissolve the yeast, mix it together with water and salt,
then add the flour and knead it altogether, let it rest around 10 minutes
( but you don`t actually need it, thatswhy it`s so fast),
and then fill it with layers of your favorite ingredients,  if you like,
this time I used goat cheese, figs, arugula, but it`s also good with cheese
and onions, plum and walnuts, olives and feta, basil or
whatever you prefer...form 2 small loafs,
but if you like you can also use the same recipe to make
fresh oven baked buns, filled or not filled.
bake it ! ( 180°C, 20-30 minutes), done!

So if you are still looking for a quick, easy and tasty bread recipe I highly
recommend this one to try, you will not be disappointed.
as bread or buns, filled or not filled it`s always a treat,
we had it several time while having guests,
they totally liked it, it´s also perfect grilled,
than if filled with cheese it gets it`s smooth consistency
all over again...

so try it yourself! have fun !
