more winter, more soup (walnut soup recipe).




ok, as you can see...

we have some more winter over here.

nothing special, just the typical weather.
cold.
and most times snowy.
which is beautiful.
besides the cold. (I know already mentioned ...)





but actually not so difficult to handle
with warm clothes and some soup :) 

so I guess we will make it happily 
through this season  .


so here is another time to 
winter walks and more soup recipes ....





walnut soup

1 carrot
1 onion
  1/4 leeks
1 handful of walnuts
2 cup milk
2 cup cream
chopped parsley




Cut the carrot, onion, and leek 
into 2 cm large cubes and roast along with the  
walnuts in a pot adding a little butter.  
Add the milk and cream and cook with medium heat 
until the vegetables are soft.  
Puree and season.
 
Serve hot and garnish with chopped parsley.




 Enjoy a cozy winter !





apple chestnut soup. (Kastanien-Apfel-Suppe)





oh yes ...
it´s the perfect time for soup again ...

so I`d like to share another one of our favorite go to recipes when the colder days start :




apple chestnut soup :





shop 3 small shallots, 1 apple and 2 packages of chestnuts (around 300g) 
finely and fry it all together gold brown in butter,  
cook for about 10 minutes.,  
now fill with 400ml chicken broth and 100ml white vine,
puree and let it boil for around 15 minutes and add 250g cream,
season it with some nutmeg, salt and pepper.




that´s basically all.

so fast and easy and really delicious.

you really should try it yourself,
cold days are around the corner ....

fall fun to do list and such.


 Happy Friday everybody,

we are back home from our lil`vacation trip...
and of course I will share a few random details soon...

As we were arriving home,
coming directly from the warm, comfy still sunny south,
it kind of felt so unreal...
we left our home street with green leaves which
where colored when we arrived back home.

and for the first time since years.
I didn`t like it.
I know myself as a so to say fall person,
this year it kind of feels different.

but you know, fall doesn`t care about my concerns,
so I decided to conclude peace by doing a little 
fun fall to do list ... :

So why not decorating with fresh herbs like in the picture above,
or...




.... try some new and fun kids art things together with my little sweet heart 1)
and yes ... soup season is starting allover again 2)
and who can say no to some autumn cakes and treats 3)
and of course some new homey decoration ideas like these pressed and simple framed leaves   4)

and looong family walks in between colored leave and fresh crisp air....

I think I could like this fall anyway...

these winter days (some home snippets and recipes).




Hello everybody, how are you ?

Actually this is quite a random post, just some snippets and an update 
of things going on around here.

With a pinched nerve in my shoulder, I quite had to
slow down a few things the last two weeks.
So still working full time, I had to set some priorities, focus on the most important things
and just let go of others, so I´m still on my way to simplify (see 2014 goal)
 and we simply enjoy some quiet winter days.

So yay It´s still very much winter! and I think this season is just perfect for coziness,
 family time and extra snuggling.

and of course some food...like...




Puffed Pancakes with baked rosemary honey grapefruit

it´s such an simple but tasty and fun recipe just the perfect start into the weekend....:)

all you need is a fluffy pancake batter (like this, I also added a pinch of cinnamon
and bourbon vanilla ), spout it into a already warm pan with melted butter and
see it rise while baking it 20 minutes in the oven.
for the baked grapefruit, I made some slices, sprinkled them with brown
sugar, honey, a little cinnamon and some fresh rosemary
and also baked it for 10 minutes in the preheated oven.

(little sidenote: by the way I just don`t know why they are called German pancakes in English,
we don`t call them so and it´s not so typical to make these sort of pancakes. 
so maybe we go with dutch babies ...)



I think we will not get tired eating this all the following winter weekends,
in different variations :)...

o yeah and like mentioned the nesting process around here
is still in full force: 


I just love the simple way of collecting branches and some winter greens
during our walks.
it´s budget friendly and adding them to some corners at home,
just creates a pretty, cozy winter atmosphere.

and when speaking of this... here comes another little recipe ...:

i don´t know what it is with soup, but I think nearly everyone loves it,
and when it comes to cold days, it is just the perfect comforting ingredients
for cozy, homey days...

one of my this years favorite recipe is this one:



Sweet potato coconut soup:



What you need:

3 sweet potatoes, 1-2 carrots, 1 potato, 2 onions, 3 garlic pods, 500 ml broth,
 1 can of coconut milk (ca. 300ml) and some chillie and curry,

Peel the onions, garlic and the chili, chop them finely. 
Peel and dice the sweet potato, potatoes and carrots.

Saute the onions in oil, add garlic, chili and curry 
Deglaze it with the broth, add the sweet potatoes, potatoes, carrots
and the coconut milk. Let it boil and simmer on low heat for about 10 minutes. 
Puree the soup after that until it´s smooth.
Season with lemon juice, salt and pepper.

winter nesting.

winter is such a pretty season, don`t you think ?
  I guess just only one third of you will join me in this case ...
 and I know you are right, winter can be a bit too cold and bare after removing all the
prettiness of the christmas season- poor winter ...
so it happens that this time round I´m working on a little nesting project again,
just to make the left winter months, a bit more comfy at home.
And when looking closely, there are so many pretty things I still want to do in this season,
until spring arrives:

Like enjoying pj days and long cozy breakfasts at the weekends,
more winter walks and collecting some winter greens for our home,
or what about cosy soup evenings and cuddling up, enjoying a good book 
and some winter treats?

not that bad, if you ask me...

... letting you know how we make progress according to this quite soon ...

early mornings and a cold soup recipe (foraging)




did you notice the smell of the air ?
It´s already smelling fresh and crisp around here, fall is near!
we now have these typical foggy mornings back these days, 
which is kind of bittersweet but anyway I love fall and I love late summer... 
so we use a whole lot of time being outside and soaking in the last summer days.
the photo above is from an early morning , sometimes it´s really worth it, 
to get out early and head in to nature, 
especially when the little one is awake quite early anyways...
so why not having a little breakfast-picnic outside,
while everything around you is fresh, clear and waking up...
it´s a beautiful start into the day.

so as mentioned spending some extra time outside
and also wanting to share more foraging things (as promised), 
... I still prepared some things that I haven`t shown you yet :

This summer and late summer we enjoyed eating some more
cold soups, which are perfect for warm days.

So since late summer has arrived and the ripe pear season has started 
and I found some places where cress is growing from spring till autumn, 
this is quite a good recipe to make on a budget, 
because you can make it with things out of your garden/forest.

You need :
2 tablespoons butter,1 onion (s), chopped.4 pear (peeled + diced),
2 zucchini, 1250 ml chicken broth (degreased),
2 bunches watercress (without hard stems)
250 ml whipping cream, Salt and pepper, white

Sauté onion in butter, stirring it 10min, altogether with the pears + zucchini 
and add 1 liter of broth. boil, then reduce heat and simmer for about 40 minutes.
Remove the pot from the heat, stir in the cress and simmer it about 5min. 
Then puree and stir it together with remaining broth and cream
Season with salt and pepper just before serving, reheat but do not boil. 

ready...Guten Appetit ! 



warm and spicy soup for cold days.

There is quite some beauty in being outside for a walk  and then getting back into a cozy home, making some fire in the fire place and eating a good warm soup. We love soups throughout the cold days.

...this is a quite easy recipe we absolutely looove over here:

Carotte-Curry-Nut-Soup: 
 (you can also use pumpkin instead of carottes,yummie!)


400 g carrot (s), peeled and sliced
20 g ginger, fresh, finely chopped, 5 tablespoons of ground hazelnuts
50 g butter
1 tablespoon sugar
¾ liter of vegetable stock
150 ml coconut milk, unsweetened
   curry powder, salt, Pepper

Sauté carrots and ginger and hazelnuts in butter. Sprinkle with sugar and caramelize slightly. Deglaze with the stock and simmer over medium heat. Season with salt and pepper.Puree and possibly pass through a sieve. Heat the coconut milk and continue to stir it foamy with the use of a hand blender. Mix it together.
 Fill the soup in  bowls and garnish it with extra coconut foam, some hazelnut powder... (I also put some fresh sclices of pear in)...
Like soups in general the soup tastes as better when it had some time to steep...
